Enzo loves cookies and biscuits and in my quest to keep him well I do a lot of baking. These little biscuits taste to me like digestives (as far as I remember) and are made of just three ingredients. • Cashew Biscuits . Ingredients . 40 g date sugar + 1 tsp 100 g cashews + 50 g 135 g tapioca flour 85 ml water . Method . Blend the tapioca flour with 40 g date sugar and 100 g cashews until a flour has formed, stopping before the nuts begin to release oil. . Blend the remaining cashews with the water into a smooth creamy milk. . Mix the dry and wet ingredients to create a dough. Separate into 10 equal parts and roll into balls and then gently squash onto a lined baking tray. . Sprinkle with 1 tsp sugar and bake at 180°C for 30 minutes. • Enjoy!

This is possibly the easiest recipe on my blog and one of the most delicious too. In fact, this is one of the most important principles of intuitive eating.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ If you are one of the rare people that TRULY enjoys mayo-less tuna, or a salad dressed with only vinegar or lemon juice, more power to you. Carrot Cake Bites Yields : 11 bites 1 cup oat flour or tigernut 1/4 cup coconut flour 1/4 cup coconut flakes 1/4 cup cashew butter or almond butter 2 tsp cinnamon 1/4 tsp nutmeg 3/4 cup shredded carrot 4 dates Tsp vanilla 1 tbsp coconut oil 1/2 tbsp raw honey Directions : Place all ingredients in a food processor and pulse until it forms a paste . Roll it into balls and freeze . . Chol hamoed is the time to restock the fridge and freezer with things you made need when there is no time to prep with the kids home here is what I make sure to have so I am using less time to make lunch or dinner 1. Precut veggies or frozen 2. Hand fruits like apples and pears 3. Freezer snack or @_freedombar 4. Simple dinners protein grilled with veggies 5. My pantry and fridge is stocked with easy proteins like eggs, tuna, sardines , cooked lentils , cooked chickpeas . I never let time get the best of what I need to do in between work and family I make sure to strategize my time wisely , stick with a schedule and routine and be tough about it . The one thing I won’t leave my house with is my huge bottle of water . Not eating past 7 PM makes me also feel much better in the AM as opposed to the 10 PM dinners we have been having over the holidays ! Do whatever it takes to get back on track and schedule an appointment with me post holidays !

In our coconut bowl we have an açaí smoothie -1/2 banana, 3 scoops of @sambazonuk scoop-able frozen açaí (it’s amazing & was gifted but is still amazing) 1 heaped tsp cashew butter then blend. What's your take on this?⁠ .⁠ ⁠It's easy to think you have to be in a particular frame of mind in order to 'start getting healthy'. Or to start losing weight. It's easy to think that you have to be at the right point in your life to be motivated enough to change where you're at 😵.⠀⁠ .⠀⁠ The problem is that sometimes this kind of thinking is coupled with a version of 'health' that is too far from where you are now, which just serves to reinforce the reason why you aren't ready to change. What do I mean by that? Well when you think of what being healthy + losing a few kilos requires, in your mind, it might mean that you have to give up a few things that you're not ready to give up (like the three wines in the evenings). If you think this is the only road to achieving your goals, of course you're going to find reasons why now is not the right time to face the task. But the truth is, you don't have to take it ALL away to be healthy. And you don't have to go from all to nothing in order to make positive change 🎈🎈🎈.⠀⁠ .⠀⁠ If this is you, it can be useful to make a change in ANOTHER area that is less daunting. So if avoiding the wine is what you're nervous about, don't.
